Our Kitchen
At Royal Bakers the day begins with two smells: yeast waking up in the proving room and the first roast cooling in the tray. We keep both simple — good flour, good water, good beans, and time. No improvers, no shortcuts, no syrups pretending to be flavour.
Our bakers work a 4am shift so the counter is full when the door opens, and our baristas dial in the espresso three times a day as the room warms.
Craft
We buy green coffee in 60kg lots direct from two washing stations we visit each harvest.
Small 12kg drum batches, roasted every Tuesday and Friday and rested four days before use.
Ground to order on flat burrs, weighed to the tenth of a gram, never held in a hopper overnight.
27 second espresso, filter by hand in batches of six, water filtered and re-mineralised daily.
Four minutes inside the bakehouse, from the first mix to the last tray out of the oven.
